I tended to stay away from parfaits because I feared the high calorie granola. But since consuming any significant source of calories for breakfast has been an issue for me {coffee with milk wasn’t cutting it}, and thus my metabolism, I decided to not freak and throw some crunch into the yogurt in order to entice me to actually eat it.
It worked.
This little concoction of plain Greek yogurt {with a dash of vanilla extract}, an assortment of berries and my favorite granola, served up in a pretty clear glass, has been the golden ticket most mornings. And with temperatures searing here in Vegas, this treat has been served up as a refreshing snack as well.
It’s yummy AND pretty AND good for me. Trifecta. There should be no surprise that my little eater loved her giant portion, as well. Has anyone noticed how much my kid eats? Seriously. She eats a ton. And I happen to love it
