Tasty Tuesday: Just An Apple

In addition to receiving positive feedback from my recipe posts, they have been really fun to write! So I decided to make them a permanent fixture on my blog. Just by coincidence the food posts have been falling on Tuesdays. I figured that was as good a day as any to write about food. And although I totally jacked the Wordless Wednesday idea from the blogging world, I had been trying to come up with something catchy for my recipes that would be posted on Tuesdays. Alas, Tasty Tuesday was born {unless someone is already doing Tasty Tuesday and then credit goes to them. Ha!}. 
Anyway, I finally came up a name, but I was on vacation last week and was struggling with a recipe. It needed to be one I could make quickly {because I am exhausted!}, with the ingredients we have in the house {because I was gone all week and need to hit up the grocery store!} and that you all would actually enjoy reading {because “insert chicken breasts into pre-made simmer sauce” is probably not that exciting!}. I was super stomped. And then I recalled one evening last week, while in Savannah with Jessica and the girls. We had a delicious, after dinner snack that I will remember for a long time….apples! Let me explain.
Jess had brought two apples in her purse to snack on for the long drive to Savannah from Atlanta, and one night after the girls had gotten their baths and were dressed in their matching pajamas, little Ilah went digging in her Momma’s purse and came upon an apple. She just couldn’t help herself and took a great big bite…

It wasn’t long before Alina got hold of the second apple and then the fun began… 
 

Jessica and I had such a blast watching our girls dive into these apples. Seriously, you would have thought we were sitting front row at a top designer’s fashion show at Bryant Park with the amount of hoopla we were making. As new Moms, few things bring us more joy than watching our children devour and relish in a healthy food. We squealed and laughed and took so many pictures as the girls clasped their tiny hands around the red fruit, savoring every morsel. I don’t think they sat this still, or that close, for this long the entire week otherwise. 

And then came the full bellies….

Recipes are very fun to develop. Creating a meal worthy of my family’s table from a handful of ingredients may be the simplest joy I get from being a stay at home Mom. But sometimes just an apple is enough, in so many ways. And they’re tasty {especially on a Tuesday} too.
