Stuffed Chayote Squash Recipe

We got three chayote squash in our baskets last week. I can’t say that I have ever eaten a one and I have definitely never cooked with one. But one thing I know for sure: when you say squash, I say stuffed! All kinds with all flavors and all types of yumminess… meat, grains, veggies. You name it! So I tried my hand at a stuffed chayote squash recipe.

Chayote Recipe

I blanched the chayote to just par of done before stuffing it with ground chicken seasoned to perfection. My Hubby and Alina gobbled it down and asked for seconds. That made my heart happy.

Ingredients:
Chayote Squash halved and seeded. Boil for 15-20 minutes until semi-soft. Scoop out and reserve the flesh {leaving a shell}
Ground Chicken
Onion, chopped
Garlic, chopped
Tomato {canned or fresh, whatever you have on hand}
Tomato Paste
Grains, cooked {I used quinoa because that’s what I had. Brown rice or couscous would be great too
Cojita cheese, or something similar
Seasonings: Salt/Pepper, Cumin, Paprika, Garlic/Onion Powder

Directions:
Salute onions, tomato, garlic and reserved chayote flesh. Season to taste
Add ground chicken. Season to taste
Add tomato paste and cook through
Stir in grains.
Fill each squash with chicken mixture
Top with cojita cheese
Bake in 350 degrees oven for about 30 minutes, until squash is tender
