I ordered a French Onion Soup not long ago and, while my family thought a bowl full of onions was less than desirable, I completely disagreed. It’s hearty, yet light. The onions are sweet and, let’s not forget the cheesy top layer! Seriously, what’s not to love? So I decided to make a slow cooker French Onion Soup to prove to my family how delicious and satisfying this meal can be.

French Onion Soup in a Slow Cooker

3 tablespoons butter, melted

5 sweet onions, thinly sliced vertically

6 cups reduced-sodium beef broth

1 1/2 tablespoons dried thyme leaves

1 teaspoon salt, ¾ teaspoon pepper

2 tablespoons sherry vinegar

6 (1-inch-thick) whole-wheat baguette slices

3 oz gruyere cheese, shredded

In a pot, melt butter over medium to low heat and add onion. Cover and cook for 15 minutes, stirring occasionally. Increase heat to medium-high and cook onions until browned, stirring frequently. Transfer onions to a slow cooker. Add broth, thyme, salt and pepper. Cover and cook on Low for 8 hours before eventually stirring in the sherry vinegar. Preheat broiler. Spoon soup into oven-safe serving bowls and place baguette slices in the soup. Sprinkle cheese evenly over soup and broil 1½ minutes or until cheese melts.
